Measure three tablespoons
About 30g per bowl. Use a level spoon — talbina thickens more than it looks like it will.
Whisk into cold milk first
One cup of full-fat milk, cold, whisked before any heat. Adding barley flour to hot liquid is what causes lumps.
Simmer on low, stirring
Bring to a gentle simmer and keep stirring until it thickens to a pourable porridge. Don't let it boil hard.
Build the bowl
Off the heat, stir in honey or chopped dates. Top with almonds, walnuts, banana or a spoon of ghee. This is where the calories come from — be generous.
Have it alongside meals, not instead of them

Talbina is a soft porridge made from ground barley cooked with milk or water. It takes its name from laban (milk), for the consistency it has when prepared. It's a traditional preparation described in the hadith and eaten across the Muslim world for centuries.

What talbina does is make the surplus easier to reach: it's warm, gentle on the stomach, and takes add-ins well. Made with full-fat milk, dates and nuts, a bowl adds roughly 450–550 kcal to your day without the heaviness of another full meal.
